CHUNKY GUACAMOLE

Another great idea for a quick and satisfying lunch. Grab some avocado and some vegetables, add some lemon juice and smoked paprika, and you get a truly scrumptious chunky guacamole.

Serves 2 to 4 :

2 avocados, diced

1 tomato, diced (optional)

1/2 small cucumber, diced

1 lemon, freshly squeezed

1 tbsp raw vegan pesto (optional)

1 tbsp smoked paprika

big handful chives

Mix all ingredients. That’s it.

Enjoy rolled in a lettuce leaf or with raw vegetable sticks or raw crackers.

RAW VEGAN PESTO

Everyone loves pesto. Or at least, almost everyone. And proper pesto is actually raw –  almost all glass jar versions are pasteurised to keep longer, but they can also be full of nasties and lack the wonderful flavour of traditional home-made pesto. This one is a super simple recipe, great on raw bread, to dip raw vegetables in, on pizza (raw or cooked), pasta (raw or cooked), … anything that your heart desires, really.

For about 1 cup :

2 cups – about 50g fresh basil leaves, tightly packed

1/4 cup pine nuts

2 tbsp olive oil

1/2 lemon, freshly squeezed

1 clove garlic

1/4 tsp crystal salt or sea salt

Process all ingredients in a food processor or a blender. Do not over process, keeping some texture to your pesto.

Will keep in the fridge for a few days. Enjoy.

RAW VEGAN GLUTEN-FREE PAPRIKA PATE / SPREAD

This raw vegan gluten-free is utterly delicious super easy to throw together in just a few minutes (excluding the soaking time for the sunflower seeds, of course).

For about 1 cup paté :

1/2 cup sunflower seeds, preferably soaked for at least 2 hours

1 large or 2 small red bell pepper(s)

1 clove garlic

1 tbsp olive oil

1 tbsp sesame oil

2 tbsp apple cider vinegar

1 tbsp tamari

1/2 lemon, freshly squeezed

1 tsp smoked paprika powder

1 tsp hungarian paprika powder

1/2 tsp crushed red chilies (optional)

Blend all ingredients until smooth. You will need to stop to scrape down the sides of the blender and/or use your high speed blender’s tamper.

Serve with carrot and cucumber sticks for a stylish appetiser.

RAW CURRY NUT MAYONNAISE RECIPE

Raw mayonnaises are such a wonderful thing to always have in your fridge. Use as a dip for raw vegetables sticks for a tasty snack, spoon on a raw burger or in a raw vegetable wrap for a quick and satisfying lunch.

In a raw dehydrated courgette wrap :

On a raw dehydrated soft tomato and herbs soft taco shell :

To make a jar of raw curry nut mayonnaise :

1/2 cup (about 75g) brazil nuts or cashew nuts (I used a mix of both), soaked for at least 4 hours

2 tbsp olive oil

1 tbsp soy lecithin* (not raw)

1 tbsp nutritional yeast* (not raw)

2 cloves garlic

1 freshly squeezed lemon

1/2 tsp curry powder

1/2 tsp turmeric (optional)

1 pinch salt

1 splash agave syrup or your favourite low glycemic index sweetener

1/2 cup pure water

Blend until perfectly smooth in a high speed blender. Will keep in the fridge for over a week.
