RAW DEHYDRATED PAPRIKA CORN CHIPS

These are so simple to make, and a healthier alternative to that bag of corn chips.

To make 1 tray – You will need a blender, a dehydrator (or an oven) and 15 minutes + over 12 hours dehydrating time :

about 500g sweet corn, fresh or frozen

1 small shallot or 1/4 of an onion

1/4 tsp Hungarian paprika

1/4 tsp hot smoked paprika

1/4 tsp Cayenne pepper

a pinch or 2 of crystal salt or sea salt

Blend all ingredients together in a food processor or a blender until smooth. Spread mixture onto a non stick dehydrator sheet. Score with a knife. Dehydrate 12 hours, overnight or until you can flip and peel of the non stck sheet. Continue dehydrating until dry and crispy. Break apart at score lines. Enjoy with guacamole or salsa.

RAW VEGAN GLUTEN FREE TOMATO TACO SHELLS

I had taco shells in mind. But as I didn’t have any corn, but plenty of tomatoes, these were born.

For about 12 shells / wraps :

2 large ripe tomatoes (weighed in at 420g), chopped

4 halves sun-dried tomatoes (about 20g), soaked in warm water for about 1 hour, then chopped

2 tbsp lemon juice

1 tbsp tamari

1/4 cup flax seeds (about 40g)

2 tbsp sesame seeds (I used white, black would give an even nicer colour contrast)

4 cloves garlic, crushed

about 1/4 tsp freshly ground black pepper

1 small bunch fresh basil

1 small bunch fresh oregano

Process the flax seeds into a fine meal using a coffee mill or similar device.

Blend the tomatoes, sun-dried tomatoes, lemon juice and tamari until smooth. Add the flax meal and blend again shortly. Transfer to a bowl and add the sesame seeds, the crushed garlic, the black pepper and the fresh herbs, roughly chopped. Mix thoroughly using a spatula.

Use a scoop to spread even-sized rounds of batter onto 2 dehydrator non stick sheets. Or alternatively, spread one big circle per dehydrator tray to make 2 big round wraps.

Dehydrate until dry enough to flip over, and dehydrate on the other side until both sides are perfectly dry, but still pliable.

Enjoy with fillings of your choice : salad leaves, guacamole, corn kernels, raw mayonnaise, sprouts, rehydrated sea vegetables, raw nut cheese, …

RAW VEGAN GLUTEN FREE SPINACH TORTILLA : 3 INGREDIENTS

Once or twice a week, I make a few ‘make ahead’ recipes. This way I save time in the kitchen, but I also make eco-sensible use of the dehydrator, by using all the trays.

The first item I set to make today is this raw spinach tortilla. It is super simple and uses only 3 basic ingredients. Add a few green leaves, some shredded vegetables, sprouts, avocado and a dressing, and you have a delicious raw vegan gluten-free 95% vegetable wrap. Popeye would love it.

  

For 1 large wrap or 2 small ones 

200 to 250g fresh spinach

1 tbsp flax seeds (~10g)

1 tbsp lemon juice

1/4 tsp crystal salt or sea salt (optional)

Grind the flax seeds into a fine flour using a coffee mill or similar device.

Process the spinach, lemon juice and salt (if using) in a food processor or a high speed blender. If using a blender, you will need to stop and push the spinach down towards the blades, or use the tamper, if you have a Vitamix. Once you have a smooth purée, add the flax meal and blend again shortly, just to mix in the flax.

Spread the mixture onto 1 dehydrator tray (use a non stick sheet). Dehydrate at 42°C until the tortilla is dry enough to pill the tortilla off the sheet and flip it to continue dehydrating it on the other side. The tortilla is ready when it is dry on both sides, but still pliable. If you dehydrate it too long, it will take a cracker consistency. If this happens, don’t worry, they can still be saved. Use a spray bottle or your wet fingers to moisten them just enough to make them pliable again.

I also made tomato, herb and sesame taco soft taco shells, marinated kale, curried kale chips, marinated broccoli and mushrooms, caramelised onions, glazed cherry tomatoes and grilled Mediterranean vegetables. Watch this space for recipes and pictures.
