COURGETTE CARROT CURRY SOUP

November 17, 2012

 Dear One,

If you are reading me for the first time, welcome to my blog, and thank you for stopping by. If you have been here before, thank you for visiting again.

This soup is incredibly tasty, and so easy to make. Great on a cold gloomy autumn night.

Courgettes and carrots make up for the bulk, add a hint of onion and garlic, some curry powder to spice up things, cashews and olive oil to get it nice and creamy … Truly delicious, I tell you …

Serves 4 (makes about 2 litres soup) :

2 large courgettes (zucchinis)

5 medium carrots, peeled

1 tiny red onion

2 cloves

1 handful cashew nuts

2 tbsp soy lecithin *(not raw)

2 tbsp olive oil

2 tbsp of your favourite curry powder

1/4 tsp crystal salt or sea salt

2 cups freshly boiled water

4 tbsp seagreens (optional)

2 tbsp hemp seeds (optional)

2 tbsp goji berries (optional)

Prepare your vegetables for the blender by cutting them into pieces small enough for your blender to handle. Add everything except the seagreens to the blender and blend until smooth.

Enjoy with a sprinkling of goji berries, hemp seeds and seagreens.

1 tsp tamari

1 handful fresh basil, cut in chiffonnade

freshly boiled water

RAW WARM RED BELL PEPPER SOUP

October 2, 2012

 Dear One,

If you are reading me for the first time, welcome to my blog, and thank you for stopping by. If you have been here before, thank you for visiting again.

This soup is an absolute hit for dinner on a cold night : everybody loves bell peppers’ sweetness. To make it even more children friendly, use a sweet apple and leave out the chilli.

For 2:

3 medium red bell peppers (I used the pointed ones, that are super tasty)

1 small ripe tomato (If you don’t do tomatoes, just leave it out)

1 sour green apple

4 spring onions (whole length)

2 cloves garlic

1 small handful cashew nuts (about 15g)

1 tbsp soy lecithin* (soy lecithin isn’t raw)

2 tbsp sweet white miso

freshly squeezed juice of 1 lemon

1 tbsp paprika powder

1/4 tsp cayenne pepper (optional)

about 3/4 cup freshly boiled water (adjust for desired consistency)

Blend all ingredients together in a high speed blender, starting with about half of the water and adding more water ass needed to obtain desired consistency.

Served topped with shelled hemp seeds and cacao nibs. Enjoy with raw crackers croutons.

QUICK WARM RAW SOUP RECIPE

September 29, 2012

Dear One,

If you are reading me for the first time, welcome to my blog, and thank you for stopping by. If you have been here before, thank you for visiting again.

Once you realise how fast and easy it is to whip up delicious raw soups, you will never be wondering again what to have for dinner, especially on those cold autumn and winter nights. Warm raw soup variations are endless, are a good staple for a super quick and easy raw dinner. The freshly boiled water will not cook the vegetables, so all the goodness in them is preserved. Alternatively, you can use cold water and either blend until warmed if using a Vitamix, or gently warm the blended soup by placing it in a heatproof bowl in a pan of boiling water.

The courgette and parsley in this one make it a lovely green.

For 2 :

4 small courgettes (or 2 big ones)

a small handful fresh parsley

5 spring onions (white and green)

2 garlic cloves

the juice of 1/2 lime, freshly squeezed

1 tiny green chilli (optional)

2 tbsp olive oil

1/4 tsp crystal salt or sea salt

1 tsp curry powder or your favourite spice mix (I used one that is onion – celery – ginger – nutmeg – rose petals – cardamom – cloves – cayenne pepper)

1 cup freshy boiled water

Blend all ingredients together until super smooth. Serve with sprouts, shelled hemp seeds and cacao nibs.

Keep Smiling
