RAW WARM ASIAN WILD RICE AND BROCCOLI ‘STIR-FRY’

This is an incredibly tasty raw dinner. Eat it warm from the dehydrator, and you will have to keep reminding yourself that it is indeed raw.

Raw Asian Wild Rice and Broccoli Stir-fry

Serves 2 :

1/4 cup wild rice, soaked in fresh water for at least 24h and up to 48h (change the soak water once)

1 broccoli, cut into florets

1 yellow bell pepper, cut into thin strands

1 small red onion, sliced thin

2 cloves garlic, crushed

 a small piece (about 2,5cm) fresh ginger root, peeled and grated

2 tbsp sesame oil

1 tbsp tamari

1 tbsp brown rice vinegar

1 tbsp rice mirin

Rinse your wild rice and put it aside to soak in the evening of day 1 to have your raw asian wild rice and broccoli ‘stir-fry’ for dinner on day 3.

On day 3, around midday, rinse and drain the wild rice, prepare your vegetables (broccoli, bell pepper and onion) and put everything in a bowl with the garlic, ginger, sesame oil, tamari, vinegar and mirin. Toss and put in your dehydrator for about 6 hours or until dinner time.

Eat warm from the dehydrator.

HOT MACA CHOCOLATE SMOOTHIE

This one is a very serious chocolate affair for cacao lovers. Not your regular breakfast smoothie, more for before going out for a whole day of vintage shopping as you need something super sustaining to keep you going while you look for berries.

 

 

For 1 hungry person :

1/4 cup hazelnuts (you can use almonds or even cashews)

1 cup pure water

2 ripe bananas

2 tbsp rolled oats

1 tbsp raw cacao powder

1 tsp vanilla powder or 1 vanilla bean

1/2 tsp maca

pinch of crystal salt or sea salt

Start by making your hazelnut milk : blend the hazelnuts with the water, strain with a nutmilk bag or a very fine sieve. Rinse the blender.

Return the strained milk to the blender. Add the banana, oats, cacao powder, vanilla, maca and salt. Blend until perfectly smooth.

If you are the happy owner of a Vitamix or similar high speed blender, blend further, until the smoothies gets warm.

If you are the happy owner (:-) of a regular blender, pour the smoothie into a glass jar and gently warm it by putting the jar in a pan of boiling water.

Or you can just have it at room temperature too, it is just as good.

Note 1 : The smoothie might seem too liquid for you, but after warming it up the fibre in the oats does make the smoothie set. If you are having it at room temperature, you might want to add in an extra tablespoon of oats.

Note 2 : I personally find the 2 bananas do make the smoothie sweet enough, but you can sweeten it more with small amounts of your favourite sweetener. I would add tiny amounts at a time, taste and only add f necessary.

RAW WARM TOMATO SOUP

This one is so quick and so simple to make, and yet, sooooooo delicious !!!

Serves 2 : You will need a knife, a blender and 10 minutes

3 tomatoes

3 sun-dried tomatoes, soaked for a couple of hours

1 shallot

3 cloves garlic

1 tsp tamari

1 handful fresh basil, cut in chiffonnade

freshly boiled water

Blend all ingredients except for the basil, adding just enough water to get your desired consistency. Serve with the fresh basil and a drizzle of olive oil. Serve on it’s own or with raw crackers for a light dinner, or with raw raviolis for a full fledged Italian dinner.

RAW WARM MEXICAN ALMOND AVOCADO AND LIME SOUP

This one is for a super quick and easy light dinner for when you have been busy all evening and forgot about dinner. Whipped up in 10 short minutes. The chilli spice mix take your taste buds on holiday to Mexico, and the lime gives it a nice quick.

For 1 or  2 :

1 cup almond milk made with warm water

1 avocado

1 lime, freshly squeezed

1 tsp sweet white miso

1/4 tsp mexican chilli spice mix

1/4 tsp ground cumin

1/4 tsp ground coriander

chives and smoked paprika (optional)

Blend all ingredients until smooth. Garnish with chives and smoked paprika and serve right away with raw crackers or raw oat cakes. Lick your bowl clean.

RAW WARM RED BELL PEPPER SOUP

This soup is an absolute hit for dinner on a cold night : everybody loves bell peppers’ sweetness. To make it even more children friendly, use a sweet apple and leave out the chilli.

For 2:

3 medium red bell peppers (I used the pointed ones, that are super tasty)

1 small ripe tomato (If you don’t do tomatoes, just leave it out)

1 sour green apple

4 spring onions (whole length)

2 cloves garlic

1 small handful cashew nuts (about 15g)

1 tbsp soy lecithin* (soy lecithin isn’t raw)

2 tbsp sweet white miso

freshly squeezed juice of 1 lemon

1 tbsp paprika powder

1/4 tsp cayenne pepper (optional)

about 3/4 cup freshly boiled water (adjust for desired consistency)

Blend all ingredients together in a high speed blender, starting with about half of the water and adding more water ass needed to obtain desired consistency.

Served topped with shelled hemp seeds and cacao nibs. Enjoy with raw crackers croutons.
